Buckwheat soup with chicken and mushrooms
You can cook not only porridge from buckwheat. A small amount of cereal is added to the soups to make them thicker and more heasy. We offer a recipe for buckwheat soup with chicken and mushrooms to diversify the menu. In general, buckwheat soup is cooked in the same way as any other soup to which cereal is added. And the more buckwheat, the thicker the soup will be. Mushrooms are suitable for any - fresh or dried.
For a soup recipe, you will need:
chicken - 1/2 pcs.
mushrooms (champignons, oyster mushrooms) - 250g
onion - 1 pc.
carrots - 1 pc.
sweet bell pepper - 1 pc.
buckwheat - about 50g
salt to taste
black pepper peas - 2-3 pcs.
bay leaf - 1 pc.
Soup recipe:
Rinse half of a small chicken carcass under running water, put it in a 3-liter pot, pour cold water and bring to a boil. As soon as the water boils, drain the broth, chicken and the pot. Pour water into the pot again, put the chicken half, bring the water to a boil, remove the foam with a skimmer. Then reduce the fire to a minimum, salt the water, add the bay leaf and black pepper peas. Cook the clear chicken broth for about 1 hour.
While the broth is boiling, rinse the buckwheat and lightly fry in a dry frying pan without oil. Pour the fried buckwheat on a plate and put it aside.
Wash the mushrooms, cut into large plates. Finely chop the onion. Grate the carrots on a large grater or cut into small cubes.
Wash the sweet bell pepper, dry it on a towel, cut it in half and cut it into cubes, removing the seeds and partitions. Vegetables, mushrooms and buckwheat for soup are ready.
Fry the vegetables in a small amount of vegetable oil.
Add the mushrooms and fry, stirring, all together. You need to fry a little. 1 minute is enough.
Catch chicken from the ready-made broth. Put the chicken on a plate, and as soon as it cools down a little, separate the meat from the bones.
Pour the washed buckwheat into the broth, stir and cook for about 5 minutes after the broth boils. Then add the vegetables to the mushrooms, stir, bring the soup to a boil, then reduce the heat and cook for about 5 minutes. Remove the pan with the ready-made soup from the stove and let it brew under the lid for about 15 minutes. Ready-made buckwheat soup with chicken and mushrooms is ready. Bon appetit!
